Serves 6
  • 1 1/2 pounds cavolo nero (also called Tuscan kale), stemmed and coarsely chopped
  • 2 tablespoons extra-virgin olive oil
  • 1/3 cup finely chopped red onion
  • 3 garlic cloves, thinly sliced
  • 1 dried red chile, crumbled
  • 1/2 teaspoon fennel seeds
  • 4 cups homemade or low-sodium store-bought chicken stock
  • 8 ounces dried cannellini beans, soaked according to package instructions
  • 1 medium tomato, seeded and finely chopped (about 3/4 cup)
  • 1/4 teaspoon coarse salt
  • Freshly ground pepper
  • 1/4 loaf Tuscan bread (about 6 ounces), cut into 1/2-inch-thick slices and toasted

  • 6 cipolline onions
  • 4 baby turnips, or 2 large, cut in eighths
  • 1 small celery root, peeled and cut into wedges
  • 1/2 pound whole baby carrots
  • 3 new potatoes, halved
  • 2 leeks, white part only, cleaned and cut into 1/4-inch rings
  • 2 parsnips, peeled and quartered
  • 8 Brussels sprouts
  • 1 tablespoon extra-virgin olive oil
  • 2 sprigs each of fresh thyme, rosemary, and parsley
  • 1/2 cup white wine
  • 2 cups Vegetable Stock, or low-sodium canned
  • One 28-ounce can whole tomatoes
  • 1 bay leaf
  • 2 cups coarsely chopped Swiss chard
  • Kosher salt and freshly ground black pepper
  • Creamy Polenta
directions:
1. Preheat the oven 475 degrees
2. in a heavy roasting pan, combine the veggies and olive oil and toss to coat. Roast 20 to 30 min, turnign every 10 min until the veggies are nicely browned.
3. Meanwhile, tie the herds together with kitchen string. Transfer the pan to the stove top of the stove. Add the wine, stock, tomatoes, and herbs cook over hgih heat for 15min. Stir in the swiss chard and cook for 2min more.
